Capriole Farms make their cheese through observation and, always, through the vehicle of taste. Without taste, the rest is trivial.  They ate as much cheese as they could get their hands on and learned the nuances that make the difference between a bad cheese, a good cheese and a better cheese. They considered building a creamery a few steps from their home just a natural extension of the kitchen.  Over the years, the genetics of their closed herd, the browse from their fields and woodland paddocks, and the style of their own cheesemaking have all contributed to the special profile of Capriole cheeses.  They have created their own little terroir. The catchwords "sustainable," "natural,"  "humane animal care," "free-farmed," and "artisan"  were the realities on which they began their farm. The end result is a cheese that is distinctively theirs - not just in appearance but in the more relevant criterion of taste. Sofia is hand ladled into barquette molds and marbled with ash.  Its texture is fine and silky in the mouth, becoming denser and more velvety with age. It ripens under a light, wrinkly geotrichum rind, making it delicate and slightly sweet.
